I know a little about basic N20 systems, but would it be possible to rig it up so you spray when ever you go WOT?
yes,
WOT switches are EXTREMELY common on nitrous kits.
I have one on my set up...along with a window switch.

Are you talking about having it always be "armed"?
I.E. You spray EVERY time you floor it?
I'd wanna be your tire dealer if that's gonna be your setup. ;)

The best way IMO to set it up is to have a Arm switch to turn the Nitrus system on, then have a WOT and MSD Window Switch to turn it on at full throttle and between a range of RPM

Exactly!
you will deff only want to spray at wot, and there are a couple of ways to achieve this, first and the most common is to use a microswitch on the throttle body, but you can also use a tps switch that will sense the voltage of the tps for wot
